Mojo Marinade

This With tangy Cuban flavours, this Mojo marinade is accented with citrus and cumin.


Mojo Marinade:

• 1/4 cup olive oil
• 2 tbsp lime juice
• 2 tbsp orange juice
• 2 tbsp lemon juice
• 1 tbsp red wine vinegar
• 1 tbsp brown sugar
• 2 cloves garlic, minced
• 2 tsp ground cumin
• 1 tsp dried oregano
• 1 tsp chili powder
• 1 tsp salt
• 1 tsp pepper


Mojo Pork Tenderloin:

• 2 pork tenderloins (each about 12 oz)

  1. Mojo Marinade: Mix together oil, lime juice, orange juice, lemon juice, vinegar, brown sugar, garlic, cumin, oregano, chili powder, salt and pepper.
  2. Mojo Pork Tenderloin: Fill FoodSaver ® Zipper Bags Zipper Bags or FoodSaver ® Containers with the marinade and pork tenderloins, turn the valve to the marinate setting, connect the FoodSaver ®Handheld Sealer and press the Marinate Button. Allow the sealer to run a 12-minute cycle to infuse pork tenderloin with marinade.
  3. Preheat grill to medium-high heat; grease grate well. Remove pork from marinade and discard marinade. Grill, pork for 8 to 10 minutes per side or until an instant read thermometer registers 71°C when inserted into the thickest portion of the meat. Rest for 5 minutes before slicing.

      Tip: Mojo marinade is perfect for all pork and chicken cuts that can be grilled or roasted. Try chops, pork roasts, chicken breasts or thighs, whole chicken or spatchcock chickens. The mojo marinade is really an all-purpose marinade that can also be used with seafood, beef, lamb or veggies. Use as a marinade for shrimp for mojo shrimp tacos.
