Moroccan Lemon and Herb Marinade for Chicken Kabobs

Fresh and zesty with a hint of spice, this Moroccan-style marinade is great for kabobs.

 

Ingredients:

Moroccan Lemon and Herb Marinade:

  • 1/4 cup olive oil
  • 1/4 cup finely chopped fresh cilantro
  • 1/4 cup finely chopped fresh parsley
  • 1 tbsp lemon zest
  • 1/4 cup lemon juice
  • 2 tsp ground cumin
  • 2 tsp ground coriander
  • 2 tsp paprika
  • 2 cloves garlic, minced
  • 1 tsp salt
  • 1/2 tsp pepper
  • 1/4 tsp chili pepper flakes

Grilled Chicken Kabobs:

  • 1 1/2 lbs. boneless and skinless chicken thighs, cut into 1-inch pieces
  • 2 red peppers, cut into large chunks
  • 1 red onion, cut into large chunks

Instructions:

  1. Moroccan Lemon and Herb Marinade: Stir together oil, cilantro, parsley, lemon zest, lemon juice, cumin, coriander, paprika, garlic, salt, pepper and chili flakes.
  2. Grilled Chicken Kababs: Fill FoodSaver ®Container with the marinade and chicken; turn the valve to the marinate setting, remove the liquid reservoir, connect the FoodSaver ®Handheld Sealer and press the Marinate Button. Allow the sealer to run a 12-minute cycle to infuse chicken with marinade.
  3. Preheat grill to medium-high; grease grate well. Remove chicken from marinade; discard marinade. Thread chicken, red peppers and onion onto skewers (if using bamboo skewers, soak in water for 15 to 20 minutes beforehand to prevent burning).
  4. Grill for 5 to 7 minutes per side or until chicken is grill marked and cooked through. (Alternatively, broil skewers on foil-lined baking sheet.)

Tip: Use this marinade for chicken, seafood, lamb, pork and veggies, before grilling, broiling or roasting.
