Moroccan Lemon and Herb Marinade for Chicken Kabobs
Fresh and zesty with a hint of spice, this Moroccan-style marinade is great for kabobs.
Ingredients:
Moroccan Lemon and Herb Marinade:
- 1/4 cup olive oil
- 1/4 cup finely chopped fresh cilantro
- 1/4 cup finely chopped fresh parsley
- 1 tbsp lemon zest
- 1/4 cup lemon juice
- 2 tsp ground cumin
- 2 tsp ground coriander
- 2 tsp paprika
- 2 cloves garlic, minced
- 1 tsp salt
- 1/2 tsp pepper
- 1/4 tsp chili pepper flakes
Grilled Chicken Kabobs:
- 1 1/2 lbs. boneless and skinless chicken thighs, cut into 1-inch pieces
- 2 red peppers, cut into large chunks
- 1 red onion, cut into large chunks
Instructions:
- Moroccan Lemon and Herb Marinade: Stir together oil, cilantro, parsley, lemon zest, lemon juice, cumin, coriander, paprika, garlic, salt, pepper and chili flakes.
- Grilled Chicken Kababs: Fill FoodSaver ®Container with the marinade and chicken; turn the valve to the marinate setting, remove the liquid reservoir, connect the FoodSaver ®Handheld Sealer and press the Marinate Button. Allow the sealer to run a 12-minute cycle to infuse chicken with marinade.
- Preheat grill to medium-high; grease grate well. Remove chicken from marinade; discard marinade. Thread chicken, red peppers and onion onto skewers (if using bamboo skewers, soak in water for 15 to 20 minutes beforehand to prevent burning).
- Grill for 5 to 7 minutes per side or until chicken is grill marked and cooked through. (Alternatively, broil skewers on foil-lined baking sheet.)
Tip: Use this marinade for chicken, seafood, lamb, pork and veggies, before grilling, broiling or roasting.
